Fresh veggies and dip is a favorite in my house, because it's not too filling and it's raw, which is a nice contrast to the dinner.

Oh! We do this great hash brown casserole. It's awesome.

1 lb bag of frozen hash browns
2 cans/jars/packets of Chicken Gravy
1 bag of Colby Monterey Jack Cheese - shredded
1 bag Cheddar Cheese - shredded
Bag of Plain Potato Chips

Preheat Oven to 350 Degrees F.

You just line a 9x11 cake pan or large casserole dish with non-stick foil. Dump most (you can't fit them all) of the hash browns into the pan.

In a pan on the stove, heat/make the gravy according to directions (the jar or canned kind you can usually microwave too). Dump made/heated gravy in over the hash browns. I never measure the cheese. Just put in as much as you want (the more the better!). Mix in the Colby Monterey Jack with the mixture in the pan. Top with crushed chips, just enough to cover the top, then layer on some cheddar cheese.

Bake at 350F for 1 hour.

Cajun Tuna Dip/Spread

Powder Red Pepper (Cayenne)
Black Pepper
Garlic Powder (NOT Garlic Salt)
Paprika
Miracle Whip
12 oz cream cheese (whipped is easiest)
12 oz drained tuna
Ritz Crackers (or which ever you prefer)

You'll notice not many measurements here. I do this recipe by sight and have the box of crackers by me to taste. Always equal part cream cheese and tuna. Use as much miracle whip (or mayo, but it doesn't taste the same) that you would when making tuna for a sandwich. The spices are to taste. Start small! Keep adding. Original recipe said 1/8 tsp of some of them...yeah you couldn't taste them. I think you would add about 1/2 tsp of the red and black pepper (don't get the pre-combined mix of these), and paprika, and then probably for the 12 oz version, I'd go with 1 tsp to start of the garlic powder. But you may go up to 2 tsp. It's been a while since I made it.

Combine soft cream cheese and tuna in mixing bowl, blend with mixer, then add miracle whip until spread or dip consistency (you can add less to spread it onto mini rye, or use it in pita). Now add the spices and blend well. Don't make the mix pink...if you do, add more of the cream cheese, tuna and miracle whip. If it's pink...it's way too spicy. :-) Chill and enjoy! (as with any foods that contain miracle whip or seafood, don't let sit out for longer than 1 hour at room temperature).

We always have a veggie tray with dip. Also (it varies each year) we make a few of these to have handy throughout the day. The hot stuff can be nuked, although they're usually gone before they get cold.

Deviled egg balls-
6 hard boiled eggs, finely chopped
3 bacon strips, cooked and crumbled
1/4 c mayo
1 tsp minced onion
1/2 tsp each s&p
1/4 tsp mustard
1 c cheddar

In bowl, combine all but cheddar until creamy. Roll into 1 inch balls. roll in cheese. Cover and refrigerate.
--------------------
Wrap artichoke hearts in bacon and bake at 400 until bacon is cooked. yummy. Can wrap some scallops and/or breadsticks too.
--------------------
Italian Zucchini Boats-
6 medium zucchini
1/3 c parmesan or romano
s&p
2 c dry bread crumbs
1/4 c parsley, minced
2 eggs, lightly beaten
2 garlic cloves, minced
2 TBS stick butter, melted
1 large tomato, diced
1/2 c chicken stock

Cut zucchini in half lengthwise. With a spoon, scoop out pulp and reserve. Cook shells in salted water 2 min. Remove and drain. Chop pulp, place in bowl. Add breadcrumbs, eggs, tomato, parmesan, parsley, and garlic. Stir in broth, s&p. Stuff into zucchini shells. Drizzle with butter and bake uncovered in a greased 13x9x2 pan at 350 for 20 min or until golden brown. Cut into 1 inch slices to serve.

Since the ovens at Mom's are taken up, we take turns each year making them at home and bring them to Mom's where we spend the day.
