I have two suggesions for you,
1) go and climb the volcanoe mount tiada (worry spelling sorry!) you can do the long route from the car park up on foot up the winding path which is VERY rewarding and offers wonderful views or you can pay for the cable car & do it the quick & easy way in less than 20mins.
2) visit Brancho Del Inferno, a long winding walk up the mountain side but the final destination is utterly stunning. A huge cathredal like space in the rocks with a water fall that falls down through an open hole in the roof. Its quite famous and popular, again well worth the effort to get there on foot.
**Enjoy, but take lots of water with you, you will need it.

Go to the zoo, it was good some of the enclosure are a bit cruel though, there is a bus to it from most resorts. The water park is ok for a few hours too. A boat trip\for a day is fun too on a catamaran, they do different priced packages too, we went on one with unlimited alcohol and a nice lunch. Have fun.

Loro parque is a total must, absolutly fantastic zoo, killer whales are new this year. Try mount teide too.
