PS2 version answers + I haven't played the game before so i can't read the manual

Basics X=Pass and Foot in tackle
Square=Shoot
Triangle=Through ball and brings the keeper out for one on one's
Circle=Cross and Hard/sliding tackle
L1=Change player
R1=Run
You really need to read the manual to master the controls tho.
