There is a heat sensing solidstate item called a thermistor that changes its resistance as the temperature changes. It can give an analog signal proportional to temperature.

A thermostat is a switch that changes between on and off when it hits a setpoint. It thus gives a digital signal that can be used for control.

That is the closest I can come to finding a difference.

Modairflow(modulating air flow) is supported by the use of a special thermistastat which occupies the role of the traditional room thermostat but is far more accurate and responsive. Modern room thermostats are fitted with an ‘anticipator’ which narrows the on / off parameters but the thermistastat is better.
