its no particular episode there is just a glipse of it at the end of acension part two(i.e --episode-52)

The final episode has about 5 minutes towards the end where Xavier is talking about things to come & one of those things is Jean becoming the Phoenix.

In the final episode "Graduation Day", Xavier was talking about the future and it showed a glimpse of Jean transforming into the Phoenix. Wasn't a fan of the show (although I adore the X-Men) but that one scene was kickass.

It was in the last episode. Magneto was also shown to have joined the X-Men.
