The guideline on the websites is to do it in the fridge, a day for every 5 pounds, but I find that 4 days for a 12-pounder is just about right, and it will still be a little frozen in the center. But that's good because the bird will be more moist, and so will the stuffing. I know, we're not supposed to make the stuffing in the bird but I still do it.

well in my experience: if you want to UNTHAW a turkey all you need to do is put it in the freezer.
Defrosting or THAWING on the other hand:
There should be directions on the side: most people will object to this but this is the way I have done it for years.
Put that bird in a pot of cold water, completely covered, on Tuesday morning, change the water every 6 hours and cook him as usual on Thursday.

In the ice box 2 days...if need sooner put in a Pot..or Bucket full of cool water it will thaw in a day

By "unthaw" do you mean freeze ?????????
If you mean "thaw", then it depends on the ambient temperature surrounding it. Do it too quickly, though, and you risk food poisoning.
