The rule, as always, is to stay away from those that ask you to pay before you can get these surveys.

Legitimate market survey companies such as Pinecone Research recruit members based on demographic characteristics -- e.g. mothers of babies 0-12 years old -- and will send surveys of products and services targeting this demographic group. Pinecone Research, however, pays only $5 per survey -- you're definitely not going to be rich with that. They can give you anywhere from 1-5 at most surveys in a month.

Other companies simply ask you to answer as many research as possible, and you don't earn anything just the chance to win at a raffle (which I find lame).

I have. I earn about $20 a month taking surveys. I've listed some of the sites I have taken surveys through and actually been paid (or recieved other rewards like gift cards or CDS) on the following site, if you are interested:

http://www.windhavenweb.com/surveys

I list how they pay you, what I like and dislike about them, whether they have an affiliate or referral program, etc.

There are others out there. Be careful though, there are also scams. Don't sign up for any survey site which asks you to pay to access the surveys. Also watch for language like "get paid for taking surveys AND SIGNING UP FOR OFFERS" if you don't want to have to sign up for stuff with other companies to get paid.

Always carefully read their terms of service and privacy policy. If in their privacy policy they say they only use aggregated info, this is GOOD SIGN they are legit. Aggregated info information that is grouped together so it can't be connected with anyones personal identification like name, e-mail, phone or address. That's what survey sites SHOULD collect. Avoid sites that say they give, rent, or sell any personal information (info that is not agregated) to third parties (unless you really don't mind getting junk mail, telemarketing calls, and spam).

Also just recently came across a good survey ratings site that I've found very helpful:

Having so many paid surveys available all the time lets you live the kind of life you want.

I travel with my family 3 or 4 months every year! While I'm on vacation, I love to take paid surveys while relaxing on the beach. I can pay for my entire stay in just a few hours of taking surveys!

My wife tried to once. After about 30 hours of completing these surveys over a 3 week time span, she earned about $6.75 worth of frequent flyer miles. The best part is that she is afraid of flying.

I've tried it twice and it's waaaaaaaaaaaaaaaaaay more trouble than it's worth. Usually they get you to answer a long survey in exchange for a sweepstakes entry. If you want to make money giving your opinion try looking for market research companies in your area that conduct in-person focus groups. As a rule, anything that promises easy money is not even worth looking into.
