Depends on where you're looking to stay. The tourist areas are split mainly into 4. Banjul which has the Atlantic Hotel. There is a new hotel called the Corinthia which is 4/5*. Banjul is still very third world with not much around it.
Moving out from Banjul towards Serrekunda there are a couple of hotels, but these have never been particularly good.
Moving further along the coast you will come to the Fajara area just outside Bakau. This is the main area for government residences and consulates. The hotels around this area are basic but on the whole reasonably good, but don't touch the Fajara hotel as this is really run down.
Kololi is probably the most developed area for tourism with plenty of restaurants and bars. The Senegambia and Kairaba Hotels are both good. There is also a clubshare resort called the Kololi Beach Club (as opposed to the Kololi Beach Hotel) where you can rent villas. The resort is superb and the only self-catering establishment in the Gambia.
In recent years there a few luxury hotels have been built, again around the Kololi area. There are exclusive and pricey.

my wife and i stayed at the corrinthin atlantic hotel in banjul we enjoyed our two weeks in febuary 2005 but the sea and the pool in the hotel were very cold also you can only have self catering, bb and half board , the hotels are not allowed to offer all inclusive but bottles of alchohol and soft drinks are very cheap in the shops eg a 70 cl bottle of vodka was less than £2 food in hotel was very good. enjoy yourselves/
