They beat his balls to a pulp. In the real world he would be sterile. Only a huge imagination will restore him. Restoration not addressed in the movie.

As was said by the two prior respondents James Bond was being hit in his private area by a heavy knotted rope, repeatedly. He is also hit in other spots also, then Le Chiffre tips the chair over to remove James Bond's male organ.

And I'd bloody laugh if he did. Seriously, he ruins the lives of countless women for a night of hot sex. It's just not worth it, and they can't help themselves can they? "No Mr Bond, don't get any ideas." Half an hour later they're making love. I'd really appreciate it if he stopped sleeping around and making women lose their jobs, families, lives etc.
