I never have cared for pumpkin pie and sweet potato pie has always been my favorite. I like to bake the potatoes rather than boil them because when they are boiled they lose a lot of their flavor. I like to leave them a little chunky so that I can bite into a little of the potato. To me you can't beat a really good sweet potato pie. This recipe is enough for a 9" deep dish or 2 smaller pies.
Sweet Potato Pie
3 1/2 - 4c mashed baked sweet potato
1 c sugar
1/4 tsp salt
1 Tsp cinnamon
1 tsp vanilla
3 eggs beaten
1/2 stick butter or margarine, melted
1 c canned cream
Mash potatoes, leaving a little chunky, in a medium bowl. Add sugar, salt, cinnamon and eggs. Stir to mix. Add vanilla, butter and milk. Stir to mix;
Pour into 9" deep dish unbaked pie crust.
Back at 350"F for 45 minutes.

It does not matter how many, just the thought. I love to make a feast even if it is for 2. The leftovers get ate and you will not have to cook for a day or two. Prepare pies and all of the Thanksgiving meal with the families choices. That is what Thanksgiving is about. Do not forget to thank God for all of his blessings.

Apple pie! It is usually more kid friendly too (compared to a pumpkin pie). And I love it with carmel drizzed on it... yumm! And Cool Whip!

I'd make pumpkin... from scratch from an actual sugar pumpkin. i'd also make fresh home made whipped cream to go with it.
