LEDs are tiny specks of gallium arsenide encased in a plastic lens. I would think that if you are using low-level wiring which is insulated, and put a little silicone caulk on the exposed leads of the LEDs, you should be fine. Test the string as you go to make sure your polarity is correct, and if I'm not mistaken, you should be connecting them in parallel, not series.
