A really great coffee machine and a separate bean grinder, and a bag of fresh beans from like starbucks. Get a great coffee machine that doesn't require filters, you just rinse out the one that's in there.
Or get him something engraved, if it's less personal. Like a clock or something. "Things Remembered" is a store I see in malls all over the place and they have tons of stuff to be engraved.
Get him something funny if he's like that, or get him something he could use but wouldn't think of, like if he has a big office get him a comfy love seat couch and a blanket or something. Ha ha. Use your imagination! Or get him a big box and a million smaller gifts in the big box so he has to open them all.
Golf clubs? Memory keys, digital cameras, the new Nintendo Wii system if he likes games or he's a playful guy, it totally depends on how serious a boss he is, and how well you know him.

Poinsettias in a nice container. Lucky Bamboo in beautiful containers make nice gifts. They live in water only and are very easy to keep alive. No green thumb required. You can buy them online. You can probably buy them at local stores or Wal-Mart.

since he's really into christmas, you could buy him some neat christmas decoration something huge. or you could make a donation to charity in his name as a gift. i think it depends on what side of christmas he's into. cuz if it's the commercial christmas stuff i'd do something along the decoration idea. maybe a gift certificate to some nice place that sells ornaments or something.
