I can recommend Mama Mia. Light, with plenty of music, as you can imagine. I went last year with my wife and we both had a top night.

Oh definitely The Lion King. It is absolutely fabulous! I hate musicals but my 15 and 17 year old nephews (who both play drums in rock bands) wanted to see it (I'm 47). Within 30 seconds of it starting, I knew it was going to be amazing. We all sat there fixated with the music and the stage and everyone agreed after that it is a show for all ages. Expensive, but worth it.

Billy Elliott is amazing, but dont know if your mother would get the British humour?? What about Chicago, or the Blue Man Group, which isnt exactly a theatre production but full of music, very lively and lots of Paint!

My daughter went to see the Lion King when she was on her school trip earlier on this year and she loved it.
There is a new Lloyd Webber musical that has just started called What To Do with a Girl Like Maria, or something to that effect. It is based on the Sound Of Music.

Blood Brothers; It will make you both cry and laugh, its so sad.
Woman in black; it will scare you and thrill you
Saturday night fever; okay maybe you'll have to ask about this one, but last time I've seen it it was fantastic!

How about Peter Pan on ice? It's light hearted, not too deep, and something you'll both agree to agree on I'm sure.
