Where can they be purchased? (Or how can they be made?) What was used before plastics were invented? Can you give references or websites?

Vinyl accordion doors that hang from a bar can be attractive. You've gotten lots of great input from these answers. There are all kinds of Ideas in the bath section of most large home improvement chains. Look in their books for the thing that fits you best.

Lowes, Glass Shower Doors

For "Curtains" that are not plastic, you might try Bed, Bath & Beyond. Or, if you're REALLY crafty, you might try making your own. Use a light plastic such as a drop clothe and hang it with your favorite material. The plastic would hang inside the tub and unseen while the material hangs on the outside for all of the world to see and admire. Make sure you add weights to the bottom and grommets to the top.

Sometimes the plastic curtains reacted with hot water. So always use cold water to clean plastic shower curtain. So, it's better to wash again with cold water with some detergent.

I made a shower curtain out of a beautiful sheet because I could not find a masculine one for my husband's shower. It is a burgundy and cream plaid. It does have a clear plastic liner tho to keep it dry. I sewed the liner to the sheet, and made a rod pocket at the top of the sheet. It gets lots of compliments.

You can get fabric curtains anywhere. Wall Mart, Zellers, nicer department stores, etc. I recommend getting a heavier fabric, so that it doesn't billow up when you're showering. They are also good, because you can throw them in the wash (on gentle) if they start to get a bit mildewed, and they last a long time. A good one should cost around 20 or more dollars, but you might be able to find one on sale.

I bought mine @ Kmart or WalMart. They are waterproof & washable. Never had any problems with water leaking through (10 yrs now). They have kind of a 'silky feel' to them but am not sure if they were nylon or synthetic. I suggest you 1st check for the magic words "waterproof" then open the package & check for that "silky texture". They worked so well I bought another pair that had a more 'cloth-like' texture & they leak. So check 1st before you buy.

I've got a sliding glass door for my shower & it works like a charm. Also, doors that open up like a regular door are very common. You can typically nab either one at a home improvement store & get it at a price you can afford.
