How many different email domains are there, and how are they classified?

Your question is like asking how many stars are there in the night sky - very many. Domains are typically classified by the last characters after the last period. For example: www.RugbyGuys.nz would be in New Zealand due to the nz. That doesn't necessarily hold true for all domains though.
