As far as mini project goes, you can do a bank project, address book or something similar.

any game (graphics mode of Turboc or OGL library), implementing any rendering/shading algorithm, any database project using flat files or connectivity using Pro*C, implementing any cryptographic algorithm, controlling h/w, programs to testing h/w, create a file system, simple OS shell (for linux), language parser/compiler, graph searching algorithm implementation, curve generator (input an equation, generate the corresponding curve) ... and so on.
