I stuff my bird with homemade stuffing. Did you know it's called stuffing if you stuff it into the bird and dressing when you cook it in a dish. I didn't know that until someone told me last Thanksgiving.

I prefer the homemade cornbread sage variety of dressing.
It is not a good idea to stuff your bird because it makes it harder to reach a safe internal temperature in the center of the body cavity.
Several years ago I bought one of those turkey frying rigs. I haven't baked a bird since. The frying process seals in the juice so the bird is nice and tender. Additionally since the outside gets seared very quickly when it hits the oil there is very little oil that is absorbed by the bird. I once measured the amount of oil before and after the frying process and the oil loss only amounted to a couple of tablespoons. Definitely not significant when compared to the number of servings that come off of the bird.

At my house we kinda use both. It's called Apple and Pancetti Stuffing.
1.) Buy a box of stoffers turkey stuffing.
2.) Dice and carmelize a small onion in a pan of olive oil.
3.) Chop up about 4 apples.
4.) Prepare the box stuffing.
5.) Add the apples to the onion mixture and then sautee.
6.) Mix the stuffing with the onion and apple mixture.
Voila Then you can tell people that it was homemade.
(don't forget to chop up about 1/2 cup of pancetti, mix well)

Never. Stuffing is evil and dangerous. By the time you get the stuffing up to a temperature to kill bacteria the breast meat will be dry as the Sahara. Best to do a good dressing recipe outside the bird so you can have a delicious dressing AND a moist, tender bird.

I swear by Stove Top Turkey Flavor!! I used to do the homemade, then one year I switched it without telling anyone. They all raved about how good my stuffing was that year. From then on I save myself a little time in the kitchen and use the great Stove Top brand. Good Luck

I never stuff my bird its faster in cooking time and its juicier. The stuffing just takes away too much juices from the bird.
Stove Top is dabomb and it is fast. I have tried stuffing in the bird and making my own but I see no difference so why go through the hassle?
