You have to bear in mind that the drinks were not actually $27 dollars, it was $25. Just because you gave them a dollar each back, they ASSUMED it was $27.
Even though they had paid $27, you still had to pay their bill of $25 which would leave you the $2.....
the missing $1, is therefore, not a missing dollar....!

In fact the guys spent only $ 27 in all - ie., $ 25 towards correct total of the Bill and naughty $ 2 being kept by you.
$ 25 (Drink) + $ 2 (Retained) = $ 30 (Paid) - $ 3 (Returned)
There is no other $1 to go any where ! Don't confuse /be confused.

As you said the total was $30, each gave $10 which means they add up to $30. But after you realised the total was $25, you re-imbursed each $1 which means you have $27 at your hand.
But you didn't take $2 from them because, from the $10 each gave, you paid them back $3 which is equal to the naughty $2 you took and the missing $1.

as there are three men 3 x £1= £3
£25 + £3= £28
£30 - £28= £2 ( which you kept you sneak)
therefore all square except you over-charged for the drinks

you wouldn't have the $2 dollars because if they paid $30 and were reimbursed $1 each. They only paid what the drinks cost i.e. $27.
Conversely if the drinks cost $27 and you kept $2 then you could only reimburse them with $1 rather than $3.

There was no missing buck. Your question was inconsistence.
From your assumption on the third line (the correct total was $25). Therefore, the drinks were not $27 as you made out on your fifth line, they were $25. So, the guys paid $27 & you kept $2.
