There are still kits available to make quite elaborate. I saw some recently in a catalogue (can't remember which) however while I can see some reason in using a waste product to make something if you have a lot of time on your hands it does seem pointless buying lots of little sticks to glue together rather than making the shape with balsa wood, card or papier mache & chicken wire.
I saw something recently about someone who had made a model of Hogwarts in matchsticks and had sold it for a very good price.

You can still do it today they sell matchsticks now in plastic bags at hobby craft and other craft stores not the same effect though as they are not burnt mores the pitty any way have a go and have some fun

I tried to make a trinket box. I made one side of the box, but didn't realise I had stuck it to my desk with the copious amounts of glue I had used and when I went to move it, it snapped into bits. On my second attempt, I made another one side, then ran out of matches. By the time I had bought some more (coz I wasn't clever enough to go and get one big bag) I had lost the side of the trinket box I had already made and just gave up!
Oh yes...I've been a quitter for years!

Oh yes! I made a Windmill and my sister made a caravan. They came in kit form and you had to glue the matchsticks to a card template. We got ours for Xmas - I don't think my parents like me very much. Ha ha.

I tried making a boat it fell to bits after about a dozen matchsticks so I diden't bother anymore

I once made a whole village with its own matchstick Fire Brigade

When i was in my early teens (eighties) the craze was for making things with wooden ice lollypop sticks. I made a little Frontier cabin and still have it.

years ago my late partner made a windmill and a gypsy caravan,my son is now restoring them as thay got broken when we moved house.
