Because you're being judged. And it's one-sided, the employer usually has all the leverage and has you under a microscope. No one enjoys feeling this powerless. You have little control. They can verbalize judgments about you (favorable or unfavorable) but you can't do the same about the employer unless it's favorable. There's also usually an undercurrent of dishonesty by both parties (for example, interviewers tend to aggrandize their own accomplishments - hey I've seen that all the time in my career). And rejection always hurt. And good jobs are hard to find. For these reasons, it's 100% normal to get nervous in a job interview.

Probably one of the things I hate the most, an interview. Going to a place asking people to judge you. You are really "selling" yourself, and if you don't get selected, you feel like you aren't good enough. That is hard on a persons ego.

Becuase they don't know if that person is going to get picked for round 2. It is very competetive out there, so a lot of people just go hoping to get picked, but most of the time they don't get picked. It is 1 out of all those applicants that apply for the job and only one position available.
