Computer or Paper?
Computer would be either Knights of the Old Republic, Fallout, or Elder Scrolls Morrowind. Yes, Oblivion should probably be on that list but I can't fairly evaluate it since I haven't played it yet.
Paper would be GURPS.

shining force for sega genesis
new rpg's are all the same, just with "better" graphics
i think nethack is good too, if you can get into it

monster hunter freedom for the psp i think because it is mithical and it is a really fun game

I love 'Fable' on Xbox, even though its a bit short and easy.
'Thief' was also great.
