So, when to simply put it, when you poke water with a pen, does the surface area increase or decrease? how does the surface area affect the surface tension?

They are two types of material

hydrophobic substances such as benzene not soluble in water which repeals molecules of water

Hydrophilic which have charged groups or polar groups such as acids highly soluble in water which attracts molecule of water

Finally there are substance like soaps which have molecules which have a long hydro carbonic chain and a polar group
These substances when put in water change thesurface tension and remove the impurities and are good for cleaning
