How do you not know your wife is not on her period? You sleep on the same bed, there's always evidence of period stains around and you can also smell her period odor. It's hard not to miss.
You must remember that just because you want sex all the time, doesn't mean your spouse is willing. Women don't just want sex, they want to feel loved and be touched and romanced. And when you give those things to her, the sex will be so much better! What you do is massage her and ask if this feels allright or where does she want to be massaged. Also, tell her that you love her and give her compliments (even if you have to lie). Tell her that she looks beautiful. Kiss her hands. Kiss her neck. Hold her. Hug her.Call her up on the phone when your at work, just to say that you love her and how she's doing. Cook dinner for her. Light up candles. Run her a nice warm bath.
Clean the house without her asking you. Look at her eyes. Her eyes are the windows of her soul. If you see sadness in her eyes, fix it. Do all these things. And you will turn her on! I know this because I am married too, man.

Maybe the better question is, WHY would your wife lie to you? You don't need to prove it, and to do so will only piss her off. Find out if there is something going on that is upsetting her.
That being said, 7 days isn't such a long time and maybe she really does have her period right now. Have you checked to see if the number of pads/tampons in the bathroom is going down each day?
Snuggle wih her at night, if she turns you away with the period excuse then say that you just want to snuggle (and mean it!). If she still turns you away, then there is something wrong.

Well if you're positive she's lying then there is obviously something else up with her. Maybe she's having some other sort of problem and doesn't want to worry you, or maybe she's embarrassed about something, or maybe she's just not in the mood and wants to spare your feelings.
There's is no point in thinking the worst until you have the evidence to back it up. There are a lot of reasons women don't wish to have sex.
Coincidentally, if you are freaking out about a 7 day fast you definitely wouldn't want to be in my shoes, I'm lucky if I get it a few times a month!

My ex- left 3 years ago. I am a single father raising a young boy on my own, and officially I now qualify as a "Born Again Virgin" because my time is not my own...
She is your wife. If the only thought in your head is "how can I catch her in a lie", then you have more issues than missing out on sex for a week...

It is possible that her menstral is out of whack. I think it's a little creepy, and yet ninfomanic that a husband knows to the "T" when the wife's period starts and ends. I think you should ease up off her and leave her alone! ...you got two good hands youre typing with

why dont you do something nice for her to get her in the mood. Make her dinner, take her out...then you can work up to sex. It's annoying sometimes when guys just jump right into sex without any effort. I need to be put in the mood sometimes and asking to have sex doesnt do it. If im in a positive mood, say because my bf made me dinner, then I will be more likely to respond to sexual advances than if we sat and watched seinfeld reruns for three hours and then he tried groping me before we went to sleep.

women don't enjoy sex sometimes in their life and that also for no particular reason. and menstrual period often prepones or postpones for different reasons. so my view is that sex is a part of love making and you should always give your wife that much assurance that sex is not the only thing in your life. and for me seven days without sex is no such big problem.

What answer are you seeking? Is it possible her menstrual cycle is off? Yes, entirely. Proving she is lying about that? If she is going through that much effort to get out of sex, something more is wrong here than her menstrual cycle dates.

Wow, you are just as horny as I am. You are just going to have to wait it out...I started reading the Bible to calm me down...My hubby is just not into it as much as I am....To me sex is like a vitamin and we all know what happens if you don't take your vitamins. You get sluggish and not perky. All I can say is just hang in there, you are lucky it is just 7 days....
