Membership for two at a dojo, where you can both study kung fu, aikido, jujitsu, or brazilian martial arts.

A day trip just past where you usually go, or to some place you've never gone, with a meal and hotel.

A compound bow and quiver with arrows.

A rental of a sail boat complete with lessons.

A kit or book on how to build a kayak or canoe.

A crawling tour of a deep long cavern. Maybe Mammoth Caves, Carlsbad Caves, or some other cave, maybe with a professional outfitters.

Rock climbing lessons.

A bank account designated for whatever adventure he chooses, plus a five book library of world travel books. One of them should be On the Road by Jack Kerouac. Another should be The Trans-Siberian Express, by Blaise Cendrars. A third should be The Old Patagonian Express, by Paul Theroux. Maybe Kon-Tiki could be the fourth.

Oh, there are plenty to choose from.

If you live in a city like Memphis or New Orleans, maybe a dinner for two at The Petroleum Club, Antoine's, or GW Fin's would be the thing. Make sure to budget enough for a nice wine and a decent tip.

For a tight budget, just get him a decent Swiss Army knife, Wegner's or Victorinox only, no rip-offs.

what usually works for my hubby is little stuff.ill remeber a conversation that he may casually mention something and ill get it.he gets so happy and suprised that i was paying that much attention and cared that much to remember.works every time LOL

Just find what he is into! this might be fun! if he is the golf-y kind, then get him a set of clubs, or a gift card. If you want ot go REALLY out there, get him a car

I like the puppy idea (if you both like animals), but if he is into sports, get him a customized jersey of his favorite sports team, but with him name and fave number on the back. I did this for my fiancee, and he was giddy like a little girl.
