This happens to me too, I have a brown eyed parent and a blue eyed parent. (My siblings all have dark brown eyes, though.) Mine change from green to brown and have many shades in them, I think they are an orange color. On my drivers license it says brown since inside they are brown.

(Maybe you are falling in love..)

There is no COLOR in an eye. The iris is made of pigments. Everybody has the same kind.

What makes the eye color is the amount of pigment in the iris. If there's a lot then the light is absorbed and the eyes are brownish. If there's not a lot of the pigment, then the light entering the eye will refract and diffuse and move around until it goes out the eye. Then the eyes will be a blueish-greenish color.
In the end, with low pigmented eye, the color will depend on the light around the person. The inside light from a fluorescent light or outside in the sun, the light reflecting won't have the same quality (in Physics we talk about wavelenghts) and so you won't see the same eye color.
