Under the iPod options tab, you can either choose to enable auto-sync your iPod when its plugged into your computer, or synchronize only selected playlist or checked music into your iPod.
If you selected manual synchronization, then you need to do it by selecting 'file', and clicking on 'sync' everytime you plug in your iPod. There's also a button beside your iPod's name in the iTunes player (dependent on your iTunes version) that accomplish the same function.
