the dubai press club have even a link for job openings. also when there isn't anything avalible right know, they provide you with some emailadresses. get in contact and ask them directly. i don't know whoelse could give you any better answers then them.
according to the uae's labour law, an expatriate employee can work only for the sponsor. therefore working as a freelancer is against the law.

The Leading English Dailies are the Gulf News and the Khaleej Times in the UAE, these are followed the other dailies like the 7Days, The Emirates Today, before applying for any 1 of these daily newspapers, you could check out their websites:
