Just tell her the truth and if she begins to go off, just leave. You don't have to worry about seeing her anymore if you quit so who cares what she thinks. Or you can stand your ground and when she begins to go off just say, "Look! This is exactly why I am quitting. I deserve to be treated with respect and any manager that runs a respectable business would know that it is inappropriate to humiliate an employee in front of other coworkers. As for you constantly accusing me of theft without any proof...some people would consider this harassment and grounds for your dismissal." That should shut her up. Good luck. I've had one too many bosses the same way.

If you want to lie, tell her you found another job. If you don't want to lie, tell the truth, "things aren't working out." You don't owe her an explanation at all. Just remember, it's harder to find another job when you are out of work so maybe just hang in there until you find something else. Then you will be telling the truth when you say you have another job. Employers usually won't check your references until they've offered you a job and they can only get dates, job duties, and other vague information about your service with the company so don't worry about a bad reference. Do what you have to do.

1) Don't lie--it's only going to get you into trouble.
2) Write a note saying that you are wanting to quit in 30-60 days. Include that you and this company are not "meshing" as well you thought.

Simply give her 2 weeks notice and leave after two weeks.
You don't HAVE to say why you are leaving.
If you want to be super honest, tell her exactly what you told us.
If you can't stick it out for 2 weeks, just don't show up. Don't worry about a reference. Those can be faked.

Well you could always just stop showing up to work. But if you want to put in the two week notice the excuse I used was I have way to many classes in college to do both and school.

Suck it up and do it in person.
Just go to her and say, "I'm giving you my 2 week notice, I'm quitting". If she asks for reason, just say its not working out.
You don't have to go into detail.
Always try to leave any job on a good foot. You never know if your paths will cross again...
