If you're really serious about that project, I would suggest somewhere along the west coast. Thick forests and a nice climate.

Appalachian mountains.
I live in Hokkaido, Japan, and friends of mine bought some land in a forest. They go there to camp and cut firewood -- so if you can find some forest near where you live, it might be best to try camping there first before you try to build. I'd give the camping stage a year or two so you can really get to know the land during all the seasons.
Hokkaido's great, too, but it's hard to live here for a long time unless you marry a citizen.

As an Englishman, I do not understand your aversion to the ocean (as you cannot get very far from the ocean in England), and furthermore, the coastal regions provide the best habitat in terms of diversity of wildlife (plants and animals). You should do some research to find out what grows where, so you can work out what you can forage and how you can get the rest delivered. Although my reply is not very useful, I would like to convey my admiration for your commitment and my envy that you have found yourself in a position to escape the horrors of urban civilization. If you can make bread, pick fungi and fruit and get clean water then you can live happily- probably a lot more happily than I do. Good luck.

There are lots of good areas near Big Bear california. I recently read an ad on Craig's list for several acres near the Angeles National Forest for $60,000...complete with two small cabins. You need to consider how you will get electricity, sewage disposal, water, etc. I believe this place had water tanks and propane tanks.

Rocky Mountain High! Colorado! It is real nice and woodsy up there. I know Vermont is good too, but if you are going to go that route, go all the way up to North West Maine. Very nice terrain. Also, I hear the Pacific Northwest is beautiful as well.
