In Ancient Egyptian times, Canopic Jars were used to house the organs of the deceased. Each organ, having been removed fom the body, was placed into a specific canopic jar, usually in the shape of a minor egyptian deity (the 4 sons of Horus, or sometimes Anubis, the rather important god of the rituals of enbalming and preservation).
The organs and their associated deities are as follows:
Imsety (Human headed god of funeral rites): Liver
Hapy(Baboon headed personification of the Nile Floods): Lungs
Qebehsenuef(Falcon headed God of the West): Intestines
Duamutef(Jackal headed god of funeral rites): Stomach.
The brain required no canopic ar as it was extracted through the nose and thrown away. The heart however, was kept within the body as it was needed when the deceased reached the underworld, where his heart would be weigned against the feather of truth to see whether or not he lived a just life.

When the ancient Egyptians mummified bodies, they removed most of the organs and placed them in their own containers, called canopic jars. The heart was left in the body, while the brain was removed and discarded.

The viscera of mummified corpses. There were usually four jars; one for the liver, one for the lungs, one for the stomach, and another for the intestines.
