Depends completely on the player and the team. All players work out quite a bit. On most off days coaches run hour or hour and a half practices for all the players. Aside from this most players are constantly at the gym to remain in top game shape. How they work out in the gym totally depends on the players and their fitness coach. Each person has their own personalized training routine, for example Goalies work more on flexibility than skating players, and skating players perhaps work more on leg strength, and upper body strength for battles in the corner. This isn't always the case though. If you are really interested you should see if you can find a couple of NHL players personalized fitness plans, and look at them.

Example: Bobby Holik of the Thrashers rock climbs on his Colorado ranch during the off-season. Slava Kozlov does his work outs and runs on the beach in Miami. Most of the workouts are built around leg strength and cardio. I would'nt be surprised if some of the European players did a Rocky IV style workout with logs and plows etc...

I used to work at a gas dock in Winnipeg and any number of Jets players (obviously this was a while ago) came to get gas for their ski-boats. They always said that waterskiing was the best off-season conditioning for hockey-but maybe that was just an excuse to hang out with babes in bikinis and ski all day;). However it does exercise just about every muscle in your body and has a low risk of injury.
