There is monumental evidence and universal agreement that monosaturated is best, followed by polyunsaturated, with saturated fats being the worst - although many people believe that the latter tastes the best. Olive Oil is an example of a monosaturated oil. It should be remembered that the rule is all things in moderation, and a little polyunsaturated fat in your diet is not going to be harmful. As many foods contain oils there is no way to completely avoid polyunsaturated oils.
