I'm guessing the project needs to be an experiment and not just a demonstration.
What area of science are you expected to work in? Are you allowed to use live subjects?
Physics:
How does the length of a string affect the period of a pendulum?
How does the density of a material affect the speed of sound?
Biology:
How does the color of a light affect the growth of a plant?
How does caffeine affect a rat's ability to learn?
Another thing you might do is Google science projects or go to the library and look for a book.

make a volcano with a tube inside that goest to the top....the tube can go out thru the bottom connected to a turkey baster you can squeeze and make it explode... thats kinda dumb I guess, but kinda cool, but I did that project long ago, lol

u can build a potato cannon out of pipe and...something else. u'd have to google it. my friend built one and got 1st place. she tested different fuels.
u can also test to see which light color will shine brightest through fog( aka dry ice) meaning- why is a cer's headlights always white? why arent they pink or blue?
