It's her last name. Her full name is Denise Scooby Doo. A song about her was a hit record:
Oh, Denise Scooby Doo
I'm in love with you
Denise Scooby Doo
I'm in love with you
Denise Scooby Doo
I'm in love with you
Denise, Denise
Oh, with your eyes so blue
Denise, Denise
I've got a crush on you
Denise, Denise
I'm so in love with you
Oh, when we walk
It seems like paradise
And when we talk
It always feels so nice
Denise, Denise
I'm so in love with you
Your my dream and I'm in heaven
Every time I look at you
When you smile it's like a dream
And I'm so lucky
'Cause I found a girl like you
Oh, Denise Scooby Doo
I'm in love with you
Denise Scooby Doo
I'm in love with you
Denise Scooby Doo
I'm in love with you
Denise, Denise
Oh, won't you hold me tight
Denise, Denise
Oh, can we kiss goodnight
Denise, Denise
I'm so in love with you
Oh, Denise Scooby Doo
I'm in love with you
Denise Scooby Doo
I'm in love with you
Denise Scooby Doo
I'm in love with you

they needed a good name. Scooby Doo. bread by the best. In the show, self entitled "scooby doo" a lighter side of scooby was actually shown. In real life, Scooby Doo was notorious for smoking crack and popping "scooby snacks" as they called them. All this can be learned from True Hollywood Story: Scooby DoO Not!

"At first, they chose between a large cowardly dog, and a small fiesty dog. When the former was chosen, then the options became a large goofy Great Dane or a big shaggy sheepdog. After consulting with Barbera on the issue, Too Much was finally set as a Great Dane, primarily to avoid a direct correlation to The Archies (who had a sheepdog, Hot Dog, in their band). Ruby and Speas had feared the Great Dane would be too similar to the comic strip character Marmaduke, but Barbera assured them it would not be a problem.[2]
Now without a centerpiece for the upcoming season's programming, Silverman turned to Ruby and Spears, who reworked the show to make it more comedic and less frightening. They dropped the rock band element, and began to focus more attention on Shaggy and Too Much. According to Ruby and Spears, Silverman was inspired by an ad-lib he heard in Frank Sinatra's interpretation of Bert Kaempfert's song "Strangers in the Night" on the way out to one of their meetings, and decided to rename the dog "Scooby-Doo" and re-rechristened the show Scooby-Doo, Where are You![7] The revised show was re-presented to CBS executives, who approved it for production." i don't know how the creators came up with it, but in the shows, his family members all have the "last name" doo. his full name is scoobert-doo. so scooby doo is just a nick name.
