I have been given a ring with a carbochon emerald in and I cannot find what it means

It's "cabochon", not "carbochon".

A cabochon stone is one that is polished into a dome or flattened ball, but not cut with facets.

You probably misunderstood the word cabochon. Your emerald has been given a domed cut instead of a faceted one.
