I'm a diehard Red Sox fan, and I'd have to go along with Jeter.
There are better Shortstops out there and there are better hitters out there, but I'd be hard-pressed to think of a better leader, and the man's always thinking out there. Look at that amazing playing against the A's in the 2001 ALDS, when from his SS position he grabs an errant relay throw DOWN THE FIRST BASE LINE and makes a backhanded relay to the plate. I've never seen anything like it.
And afterwards, what does he have to say about it?
"I was supposed to be there," Jeter said. "I'm supposed to read the throw. I just got there."
Class act, pure and simple.

Even if I was not a Yankee fan I would still have to go with Mr. Derek Jeter. He has earned a mr. in front of his name from me. he is THE class act. You have to go back a little ways to find some with as much dignity as he has. He is a figure that if you look at him you get that he plays his heart out every game and behaves like a gentleman off the field. He has got a sort of class that just rises above the rest.

Since we are not talking about skill and talent I would have to say David Eckstein. He is a class act and not to mention that he isn't the typical major leaguer but he got to the show on hustle and being a professional.
PS i'm not an Angels fan

No idea what "dignaty" is but I'd say Pujols on the others and maybe Jeter a close second as he is pretty dignified despite being a Yankee.

Withouta doubt it has to be Sean Casey of the Tigers. I am a Reds fan, while he was here, he was a pleasure to watch. Ran out every ground ball, played hard every game. Not to mention a great guy off the field.

No question it's Manny Ramir... nah, wait a minute...
Gotta go with Derek Jeter on this one. especially since he's done from day one of his career. But there are some outstanding choices mentioned in these answers.

Derek Jeter, Plays his heart out every game. Class act on and off of the field. His "Turn Two" foundation helps inner city youths.

going with a couple of TIGERS
Leyland is probably the best all around person with dignity and spokemen-ship
but
for a player has to be SEAN CASEY---nicknamed 'the mayor' while in Cinncy--always shows the utmost in class
