I won't have time to make anything the night before thanksgiving because me and my husband will be driving to our families house, (we both also have to work the day before Thanksgiving) is there anything delicious i can make Tuesday that will stay yummy and i can travel with for 4 hours Wednesday night? new cook here? recipes?

Well, the pies or a spice bundt cake will hold over well, also I've read some neat sounding recipes for corn cassarole or yam and potatos mashed dishes-- Also you could bring the spided cider or punch- the one I use is apple juice, cranberry juice, some orange and then 7up with apple slices it in- good and simple. Its actually on the albertsons website this year! Happy Gathering!

You could also volunteer to make the appetizers. There are many things you could do in this area that require almost no cooking in advance -- you just need to be prepared to assemble some visually beautiful presentations and everyone will be delighted. For example:

1. A cheese tray, with 2-3 really nice artisan or imported cheeses like a goat cheese, brie, gorgonzola or stilton, and a good artisan cheddar (not the orange commercial stuff we think is cheddar in America). Present with good quality whole wheat crackers (like Carr's) or a sliced baguette, toasted walnuts, and dried fruits like apricots or cherries.

2. A hot artichoke dip. You can make that two nights before and freeze, let it thaw on the drive, then pop it in the oven to heat when you arrive. Serve with sliced baguette.

3. An antipasto - which in true Italian tradition, is NOT a salad. It is an assortment of marinated veggies, cheeses and cold cuts, so you can use olives, roasted marinated bell peppers, marinated mushrooms, fresh cherry tomatoes, cubes of a good salami, cubes of a good provelone or sliced fresh mozzarella. You can prepare your veggies, do all the slicing and chopping Tuesday night, and just package each item up individually in tupperware or baggies. Then just lay it out to make a pretty tray when you arrive, drizzle it with an extra virgin olive oil vinagrette and sprinkle with fresh basil, and you're good to go.

4. Smoked oysters with cream cheese on water crackers, with a sprig of thyme or dill for garnish.

Plenty more very elegant things you could do that are very simple and require almost no cooking. It's all in how artistically you present it.

Well, I gave someone this recipe for potato salad earlier and it usually keeps very well...even tastes better after it has sat a day or two because the flavors blend well. It doesn't sound too difficult for a new cook. You would have to store it in a cooler for your 4 hour trip though.

INGREDIENTS
6 medium potatoes
1 small onion, finely chopped
1 cup celery, chopped
1 teaspoon salt
6 hard-cooked eggs, diced
2 eggs, beaten
1/2 cup white sugar
1 teaspoon cornstarch
salt to taste
1/2 cup vinegar
1 (5 ounce) can evaporated milk
1 teaspoon prepared yellow mustard
1/4 cup butter
1 cup mayonnaise
DIRECTIONS
Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, 1 teaspoon of salt, and hard-cooked eggs.
While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
Stir the dressing into the bowl of potato salad gently until evenly coated. Chill several hours or overnight before serving for best flavor.

**my mom makes awesome potato salad (don't have the recipe) but she cooks bacon and crumbles it up and mixes it in...it's really good! You might want to add that in.

The easisest thing to do would be a dessert. That way you dont have to worry about heating or refridgeration and desserts travel easily. I suggest some sort of pie or cake. 7 layer salad

Start with frozen peas at the bottom

Then start layering all your favorites

lettuce, Bacon bits, lettuce. cucumbers, lettuce, tomatoes, lettuce.......

Make lasagna and freeze it. when you get there pop it in the oven. you can take bread, or a desert too.
