A regular sewing machine will usually have only one spool of thread and a bobbin. Modern machines can do lots of stitches apart from straight sewing: zig-zag, buttonholes, decorative stitches, etc.
A serger (or overlocker) usually has 3 spools, and no bobbin. they create an edge to your fabric or seam which stops it fraying. You can also get a 4-spool machine which will give a seam as well as overlocking the edge, these save a lot of time, very good for stretch fabrics!

A Serger is a sewing machine that overcasts the raw edges of a fabric with a V-shaped stitch. It will cut the material as it sews it together. This is what they use on the bottom of jeans to get the cuff.
