Check the feedback, make sure there aren't any recent negatives and that people who are leaving it have substantial feedback themselves. I've used money orders several times without any problem, most sellers are honest- but those few bad ones can ruin your day...

just make sure the seller has at least a decent amount of feedback with a high % (97+) of positives. its the number by their star and the % below that.
steer away from people with little to none feedback, especially if its an expensive item.

It depends on the seller. Don't use those methods with a low rated seller or you will get screwed. Those methods have less protection.
