Oh God i love this kind of question, like very easy to answer but it's really hard.
Ok then if we talk of these 2 bands then i will tell my opinion one by one first :
Dokken, is the hard rock or glam metal band that very famous in their genre, many people in underground music community are loving this band, specialty in this band are Don dokken and George lynch, the vox and the guitarist. Don have an amazing voice that can reach a high octave and george play his guitar like an angel. Especially when we listen to their tooth and nail album. ouch a really nice album to listen to.
Cinderella, is in the same genre as Dokken, but what make them so famous is their vocalist Tom, he have a cool vibration in his voice. Very manly voice, i love his voice, especially when he sing Nobody's fool. What a song.
But if i have to choose, i still give my point to Dokken, cause they born earlier than cinderella, and their music is more progressive than cinderella. Dokken's music is quiet complicated.

definately Dokken. Why? George Lynch ofcourse! Cinderella is a great band, no doubt, one of my favorites. But - musically speaking, Dokken wins.
