Basically as the apple is left on the table with air, the air will react with the apple and carbon is produced. The process is called oxidation.

Apple has lots of iron. Iron rusts in air when brought in contact with oxygen and turns brown.

catechol oxidase + catechol + oxygen = benzoquine

catechol oxidase is the enzyme that aids the reaction between catechol and oxygen. Catechol is found in almost all fruits and when it reacts with the oxygen in the surrounding air it forms benzoquine which when joined into chains forms brown melanoid pigments.
