A projectile in the calssroom physics sense is something that is launched or thrown by a power which does not come from the launched or thrown item itself.
For example, a bullet fired from a gun is propelled by the gunpowder, which is not part of the bullet (though it is part of the cartridge assembly).
A rocket is not a projectile in the classroom physics sense because its motor and the fuel used by the motor to provide thrust are parts of the moving piece.
However, note that Yahoo's online dictionary at

defines a projectile as:
"(1) A fired, thrown, or otherwise propelled object, such as a bullet, having no capacity for self-propulsion.
(2) A self-propelled missile, such as a rocket."
From a practicing physics point of view, whether the projectile can or cannot alter course by propelling itself is not relevant -- force is force, whether it comes from outside the object or inside of it. But to keep things simple, most classroom physics does not bring rockets into the equation because their mass is constantly changing as they burn fuel to apply thrust, and this means all sorts of calculus equations enter into what would otherwise be nice neat little algebra problems.
