If I have only those two to choose between, Dragonlance wins easily. Although I generally dislike many of the later works by other authors, the original two trilogies by Weiss and Hickman are generally well written with interesting characterization. Xanth is a bunch of bad puns in search of a plot, although the first three books of the series are interesting, the novelty soon fades. Anthony doesn't have the excuse that other people continued the series either.
Neither series would make my top 10 list though, Dragonlance was badly flawed by the purely commercial decision to leave out several important parts of the story in order to avoid spoiling the modules released by TSR. And the whole D&D morality balance of good and evil thing just doesn't work for me.

I haven't read Xanth, but I did enjoy the earlier books of the Dragonlance series. I don't follow the occidental ideas of good and evil, however; I prefer the oriental idea of balance and imbalance- that somewhat diminishes the series. I wasn't fond of the way the twins were portrayed, since I am a twin and there are more than enough misconceptions out there already, but the 'evil twin/good twin' pops up everywhere else too.
I'm a huge fan of Mercedes Lackey's Valdemar series and Anne McCaffrey's Pern- there are a lot of better fantasy books out there than Dragonlance. The magazine Realms of Fantasy is excellent as well.

between those two, Dragonlance hands down. i love Dragonlance (well, the ones by Weis/Hickman), however, another series written by Weis/Hickman i think is better, it's called The Sovereign Stone Trilogy, just awesome. then you have a classic like The Shannara stories by Terry Brooks. or even the Memory, Sorrow, and Thorn series by Tad Williams is incredible T.A. Barrons Lost Years Of Merlin series is great for the young readers (although it's a stretch to call it fantasy, it's more in the vein of Harry Potter).

I have only read Xanth books, and I liked them quite a bit at first, so they get my vote.
I liked Anthony's Adept series and Immortality series perhaps more. How many Xanth novels are there now? I guess after a while, it can just be too much of a good thing.
Other series I have enjoyed are Anne McCaffrey's Pern series and Crystal Singer (wish there were more of those) and Katherine Kurtz's Deryni series.

I enjoy both series. My decision to read one or the other depends upon my mood at the time.
Xanth when I want light reading to pass some time
I would pick up Dragonlance when I want to get absorbed more.
