saying karaoke as an english word just sounds too weird to me

Yes that is correctly the way to say it. It is a Japanese word. Americans and Westerners tend to generally mispronounce Japanese words. Their alphabet is based on three things, Kanji, and two Phoenetics, Hiragana and Katagana. So it is spelled broken down like this:
Ka ra o ke ( kara okay) this is made up of 4 phoenetics.

Well, a long time ago in some redneck bar a bunch of people were drunk and called it Karaoke so it stuck.

The correct pronunciation of the word is kar-ee-oh-kee no matter where you are.
