You either have air (insufficient coolant) in the cooling system, plugged up radiator, or a failed water pump. Maybe even a bad radiator cap.
If there is air in the system there is more than likely a leak. Cooling systems in cars are supposed to be sealed and work under a specified amount of pressure.
Other things that may cause this is a cracked cylinder head or block and also a leaking cylinder head gasket. You didn't state year make model so I can't help you much more. Yes, some specific vehicles have certain traits which help diagnose problems like yours

Sounds like it's low on water, most new cars have a bleeder valve on the cooling system to get the air out. You probley have a leak and as the engine cools the system pulls in air instead of the water from the overflow.

you need to replace your thermostat it will only get worse
