No one knows for sure, but it is thought to be a symbol of royal power because it has the face of the king who built it (Khafre of the 4th Dynasty) and the body of a lion. The lion was considered a very powerful animal and was associated with kingship (you find this kind of association in other places too, like in Mesopotamia).
It is possible that the inspiration for building it simply came from the shape that emerged as they quarried out stone from around it to build the pyramids there. The rock that makes up the Sphinx is quite poor quality (that's the reason for the heavy wear patterns on it). It was not used for pyramid building because it wasn't high enough quality. Perhaps as they worked around the bad section, something looking like a lion started to take shape, and they were inspired to turn the lump of poor-quality rock into something.
From the New Kingdom on, it was associated with the god Re-Horakhty (litterally, Re-Horus of the two horizons) a type of solar deity.

the sphinx like we all know has a body of a lion and the head of a human.
the face of sphinx is the face of king chephren and they used the body of a lion to symbolize strength and power.
so the sum is a combination of intelligence, royalty, strength and power.
at the time of king chephren (we say in egypt, Khafra') the statue was a huge rock so the pharaohs turned it into sphinx (Abul Hol) as a symbol of guarding their temples.
