I'm with Sanmigsean here, Makati is a boring, over rated plastic place with lots of snobby people out on the sidewalks having fun. As an expat, the Malate area is so much more genuine, I even run up and down the streets in jeepneys sometimes, it's safe.
The area is more run down, but they're making a huge effort to turn this around, and there are some expensive hotels here, the sunset is great and you don't have to wear silly crocodiles or polo ponies on your shirts to get a drink. There's everything here from 18 peso beers to 3 dollar beers and rooms from 300 pesos to 200 dollars, meals from 50 pesos to 50 dollars, and it's a lot more real!!

The best area to stay in Manila is Makati. It is safe and clean with beautiful parks and friendly people. You have a big choice of restaurants and bars. There are also several shopping centres and cinemas.
Malate area is indeed more real. Some streets are scruffy, smelly and known for its red light districts and nightlife. It is a fun area for a night out, but maybe not the best place to stay. If you are there on business stay near where you will be having meetings because traffic can be bad. If you are there on holiday, absolutely FORGET Makati, Ortigas, etc. as they are boring, expensive, plastic environments. These places are like hanging out in a shopping mall all day.
For tourists who are spending a night or two in Manila on their way to other parts of the country, the best place to stay is around Malate / Ermita area. The streets are a bit dirtier, but you have a large selection of hotels ranging from smaller B&B's to 5 star international chains. There are a ton of fun restaurants & bars to go to with fun ranging from clean places with live bands, to "naughty" fun places and everything in between. This is also close to Intramuros (only thing really worth seeing for tourists in Manila), Baywalk, bus terminals to Subic & Batangas, Ferry terminals, and is equally far away from the airport as Makati is - only the traffic getting to the airport is not as bad.

If you aren't in Manila on business - Makati really sucks. Really, before going to Makati its better to save the money for the ticket, and just go hang out in a shopping mall in your home town.

If you're budget conscious but like night life, bars, restaurants and accessible to most part of Luzon, i recommend Ermita. if your on a holiday, better stay at malate, where u can find almost all the hotels some are fronting the manila bay, u can just walk to go to remedios st., adriatico and nakpil where most of the bars are located, its much cheaper than makati..

I had the privilege before of being in all of the 5 star hotels in town for scientific activities. Each one has its beauty! I was sponsored by different drug companies, that was before the economic crisis. At present , there are lesser activities sponsored by these drug companies. Just imagine, it is not only ordinary people who is experiencing this but also the mutinational companies!
At the Philippine Plaza, you will love the serenity of the surroundings.
At Manila Hotel you will really feel that it is one of the oldest hotel in the Philippines despite its renovation. I can say I love its lobby since there are many sofas to sit down. It is very rare for hotels to have big lobby like this one. I choose this as the hotel when my sister walked down the aisle 2 years ago at the Shrine of Jesus near the Mall of Asia. It is really one of the elegant hotels in town. Brides can make an option to check in here, there is a red carpet in the lobby where you can have a nice background for your picture taking. It is also one of the hotels with the biggest mirrors in the room for the pictorial of the bride. Others have relatively small ones & lighting for the picture taking isnt that nice! We were lucky to have their promo that time. I also love its flower decorations at the lobby.
How I love Makati Shangrila, it is one of the most modern hotels in town. It is really in the heart of Makati, where the action is! You can say that the hotels had modernly improved because of their facilities in the comfort room.
Oh I love the lobby of Manila Peninsula, it exudes an elegant & romantic ambiance. You can just sit down on the 2nd floor & listen over their music.
At Edsa Shangrila, it has also the convenience of being at the heart of shopping malls like Megamall & Shangrila. Aside from Makati Shangrila, this is also one of the most modern hotels in town. I think I had checked in here 2 or 3x.
I love my stay at The New World Hotel, this is the only hotel I had stayed in where you will really feel safe when you swim. From the swimmming pool to the shower rooms, there are rubber mattings in which you will really feel safe while walking after swimming. I hadnt found this in the other hotels I checked in . It is also one the strategically located hotels at the heart of the shopping malls. You will see the modernized hotels, they have a separate toilet room & a separate one for shower. It was good it is where I checked in when I have my god daughters with me.
Bellevue Hotel in Alabang is also at parr with other hotels when it comes to the room. Their food is even good.
I had also checked in at Hotel Intercontinental after its renovation! Though it is in Makati , it is abit far from Makati's night life unlike Makati Shangrila. I had experienced room service here for the breakfast since I have work the following day & have to start the day early.
The defunct Manila Midtown Hotel is also the frequent sites of conventions. It is at the heart of Manila. I just wonder what happened to this hotel.
I had also stayed at Mandarin Hotel, it is abit far from Makati's shopping mall. Though this is awarded as the best business hotel in 5 consecutive rows.
I had checked in once in which my driver wasnt available to pick me up. Dont get the mistake of calling a taxi at the hotels. It is so expensive.

Malate! You know Boulevard mansions? It's a bit cheaper than the rest. The customer service there is great. I always check in there when its brownout :P Plus, u get to have a very cool view of manila bay
