1.) The yelling thing would suck, I'd get out of there or report it to someone if it happened on a regular basis.
2.) The eavesdropping thing. If you're having a personal conversation, it is very rude for him to listen in - but on the other hand, if you're on the clock, you're supposed to be working, right? Maybe he wasn't eavesdropping, just trying to break up the little pow wow at the water cooler. Also, I think he might have the right to eavesdrop if you're having a conversation related to the job, (eg. phone call from a customer, etc.) It just depends on the situation.

Fix his little red wagon by stomping off in a huff after you loudly tell him to take this job and shove it. or you could smile and nod a lot while he turns purple yelling and say yes sir, even if he's a mam. Perhaps you could plot illegal doings when you're sure he is listening or you could just do your work. It all depends on how badly you want to keep this job. I especially like plotting someone's untimely demise with lots of grissly details.

Wait until you find another job, then quit. That person probably has some control issues or something.

I would be very angry. I'd secretly tape him and then send in the record to his boss...
