This is one of those jobs that still follows the old apprenticeship career path. Basically, it's the same with most fine instrument building jobs. You start of learning basic carpentry. Then at some point you need to find somebody else that already makes pianos and learn the rest from them. I would begin by researching smaller piano makers if you're interested in making this a career.
