Here's a simple recipe for nachos, from my personal collection of recipes:

Cotterall's Special Baked Nachos:

2 cups bulk mixed munchie mix
1 cup of crushed Kettle Valley baked white cheddar chips
1 cup Doritos nachos
4 oz. grated cheddar or Monterey Jack cheese
2 tablespoons sweet green chillis or 1 jalapeno, seeded and diced
1 cup mild salsa, to which 1/2 teaspoon minced cooked garlic and 2 teaspoons fresh chopped cilantro are added
1/2 cup mashed refried beans

Spread the chips and nachos on a greased baking pan, fairly wide. Spread the beans on top and sprinkle the cheese and jalapenos on them. You may add a little chopped lettuce or tomato, if desired, but it's better without it. Bake for ten minutes in an oven preheated to 350 degrees F. Serve with the salsa on the side. Makes 8 1/2 cup servings.

Oh my...
My guys eat salsa like crazy! I make the Mr. the rice a roni Spanish rice and substitute the water with salsa... Burritos one of the teenagers and the Mr. wont eat them without salsa.
Spaghetti instead of sauce it is salsa... I do not eat it much for these guys have to have the hottest stuff that we can find.....

Tortilla chips are the best if you want a snack. If you want breakfast mix some in with eggs and scramble the mixture up. Just go easy on the salsa if you're mixing with eggs because it can make them to liquidy. Then just put the scrambled eggs into a tortilla. They make great breakfast burritos (especially after a night of drinking).
